When your new baby is your fourth child, life around you still moves full speed ahead.
I remember when I had my first child in 2010, during my maternity leave I relaxed all day while nursing her, watched TV and napped when I could.
Fast forward to now and I eat standing up, tackle daily tasks while wearing the baby and spend a big part of the day shuttling my older children around.
I’m certainly not complaining, but most days I don’t know whether I’m coming or going.
My kids are such sports, though. Because of our hectic life at the moment, they’ve enjoyed more take-out for dinner and food on the go. (I will say, the baby is only five weeks old and I’ve managed to cook dinner at least half the week. Not too shabby!)
Since the baby nurses every two hours, I have a very short window to run errands and do school pick up and drop off. And we’ve often found ourselves out and about during lunchtime.
When you don’t have much time to spare it’s easy to want to grab something quick to eat. I recently learned Wendy’s has some yummy, fresh options for the summer.
I had the opportunity to visit my local Wendy’s and see firsthand how their salads are made. Chef Hayley demonstrated how much work is put into these new summer salads and explained how each salad is hand prepared.
Fast facts about Wendy’s Summer Salads
- There are four salads to pick from: Fresh Mozzarella, Taco Salad, Strawberry Mango Salad and Power Mediterranean Salad.
- All the lettuce is hand-chopped and the produce is hand-picked.
- Your salad is made to order. And they are made fresh daily.
- Besides fresh beef, Wendy’s offers other fresh ingredients like fresh mozzarella cheese, strawberries and lettuce.
At the local event, I was able to sample all the four salads and honestly, they were all delicious.
I was surprised because you never think a great tasting salad can be delivered so quickly at a restaurant. But, when the ingredients are fresh and the chicken is hot and flavorful, you realize “OK, this is my new go-to when I need to stop for lunch!”
It’s hard to narrow down my favorites, but I really enjoyed the Fresh Mozzarella and the Taco Salad.
The Fresh Mozzarella boasts a blend of spring mix and freshly chopped iceberg and romaine lettuce. It’s topped with a freshly grilled, all-white chicken breast, fresh mozzarella cheese, grape tomatoes and a basil pesto sauce. It’s also served with French bread croutons and a balsamic vinaigrette.
The Taco Salad was the most fun to eat. Wendy’s signature chili is the star of this dish and it’s paired with hand-diced tomatoes and shredded cheese over a bed of iceberg and romaine lettuce. Folks who order this salad will also get a side of sour cream, crunch tortilla chips and a spicy salsa.
There’s no right or wrong way to eat it, but you definitely won’t want to eat it in your car!
These salads are limited time for the summer. I highly recommend trying any one of these salads if you’re looking for some fresh lunch options.
