Air Fried Apple Pie Egg Rolls

  • 2 apples, peeled, cored and diced
  • 6 tbsp. unsalted butter
  • ¼ cup of sugar
  • pinch of salt
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  • 2 tbsp. all-purpose flour
  • 2 tbsp. lemon juice
  • 6 egg roll wrappers
  • 2 tbsp melted butter (for sealing egg roll wrappers)
  • non-stick cooking spray
  1. Using a large saute pan, add unsalted butter, apples, sugar, flour, cinnamon, salt, lemon juice and vanilla and bring to a simmer on medium high heat. Simmer for 2-3 minutes.
  2. Reduce heat to medium-low and continue to simmer for another 2-3 minutes.
  3. Remove the pan from heat and allow the apple mixture to cool. Set aside.
  4. Lay out your egg roll wrappers on a cutting board in a diamond shape.
  5. Brush the melted butter along the edges of all wrappers.
  6. Place 2 tablespoons of the apple mixture in the center of each wrapper. Leave about 1 inch of space along all edges.
  7. Find the end nearest to you and fold it over the filling to seal. Then fold each left and right side over and roll the wrapper into a cylinder shape.
  8. Spray your air fryer basket with non-stick cooking spray.
  9. Place egg rolls next to each other carefully in the basket. Try to leave a bit of space between each one.
  10. Cook at 390 degrees for 8-10 minutes.
  11. Sprinkle the egg rolls with powdered sugar or cinnamon before serving.
  12. Serve immediately.
