I’m giving away a Sheet Pan Suppers Meatless prize pack thanks to my partner Workman Publishing.
If I can be honest, as much as I love to cook, I struggle getting dinner together these days.
Some nights I actually make something like baked risotto with chicken, other times I will use my slow cooker, and then there are the nights I make baked chicken nuggets and fries. Those nights are my favorite. Why? You know the answer; it’s easy.
If you only have one child or four kids like me, the hours between 4-7 can get tough. In my experience, kids can change their personalities and inherit this type of energy we don’t see much of during the other parts of the day. 🙃
In an effort to key my chicken nugget days to one night per week, I’ve come across another method of making dinner. Sheet Pan Suppers!
Sheet Pan Suppers is a one-pan approach to cooking, using three techniques – roasting, baking or broiling. Tasty yet convenient!
I’m happy to be giving away one copy of the new cookbook Sheet Pan Suppers Meatless by Raquel Pelzel to one of my readers this month!

Sheet Pan meals are wonderful! My favorite (and quickest) is to toss baby potatoes, carrot slices, parsnip slices and some asparagus in some olive oil and minced garlic. season with salt, pepper, and parmesan/romano cheese. Suuuper yummy and filling!
