Chia Seed Pudding

  • ¼ cup Chia Seeds
  • 1 cup of Vanilla Coconut Milk (I use unsweetened)
  • 1 cup of Greek Yogurt
  • 2 tablespoons of Maple Syrup
  • 1 Teaspoon of Vanilla Extract
  • Couple of pinches of Kosher salt
  • Toppings like chopped berries, sliced almonds or granola
  1. Combine coconut milk and Greek yogurt in a bowl. Whisk together.
  2. Add maple syrup, vanilla extract and salt.
  3. Next, incorporate the Chia seeds.
  4. Let the mixture sit in the fridge for a couple of hours or overnight. That should give the Chia seeds enough time to plump up, making for a thick, creamy pudding.
  5. Finally, once chilled, spoon into dishes and add favorite toppings.
